Unabhängig vom Messer liegen die federnd gelagerten Hartmetallstäbe mit kohlefaserverstärkten Polyamiden perfekt an. Dies wird durch zwei unterschiedliche Winkel zwischen Klinge und Schärfstäben gewährleistet. Auf diese Weise kannst Du zum einen Messer mit deutlichem Materialabtrag schärfen, indem Du die Spitze beim Durchziehen nach unten richtest. Zum anderen ist auch das Abziehen, also das feine Entgraten, der Messerschneide ein Leichtes. Hierfür musst Du die Spitze beim Durchziehen nach oben positionieren. Er lässt sich platzsparend zusammenklappen und dementsprechend auch einfach transportieren und verstauen.
