After the great success and the lasting popularity of the Old Bear series in the style of traditional pocket knives, Antonini has also released the same series in good old carbon steel for lovers of the original and authentic. When no chromium is added to the steel, it has the advantage of being very easy to resharpen. For this type of blade, no elaborate sharpening system or even the manufacturer is required. As in grandfather's times, the underside of a plate or the bottom of a stoneware grain bottle is sufficient to quickly restore a sharp working edge to the knife. The blades gradually develop a characteristic gray patina with use, which in turn provides a certain degree of rust protection.

Wenn dem Stahl kein Chrom zugefügt ist, hat er den Vorzug der sehr leichten Nachschärfbarkeit. Für diese Art von Klinge muss kein aufwändiges Schärfsystem oder gar der Hersteller bemüht werden. Wie zu Großvaters Zeiten reicht schon die Unterseite eines Tellers oder der Boden einer Kornflasche aus Steingut, um zügig wieder eine bissige Arbeitsschärfe an das Messer zu bekommen. Die Klingen erhalten im Gebrauch allmählich die zünftige graue Patina, die dann ihrerseits einen gewissen Rostschutz bietet.
