The book is written for hunters and others with easy access to game meat, but the ambition is not least that it can help pave the way for even more ordinary consumers to want to eat game.
Food made on venison has a reputation for being time consuming and traditional with a distinct taste of venison. But over the past few years, Mark has been experimenting with making game dishes at eye level for both hunting events and in private to show how wonderful eating game can be with the right preparation and that it can be incorporated into a busy day. It has been a great success. He has found the inspiration for the book's 64 super delicious dishes up close. On a daily basis, he works in the restaurant with people of many different nationalities, and his girlfriend is half Thai. This is what the book is about.
