Chef at King Hans Kælder, Mark Lundgaard, has hunting as his great passion and thereby utilization of the game that you as a hunter are so lucky to bring home. The book is written for hunters and others with easy access to game meat, but the ambition is not least that it can help pave the way for even more ordinary consumers to want to eat game.
Food made on venison has a reputation for being time consuming and traditional with a distinct taste of venison. But over the past few years, Mark has been experimenting with making game dishes at eye level for both hunting events and in private to show how wonderful eating game can be with the right preparation and that it can be incorporated into a busy day. It has been a great success. He has found the inspiration for the book's 64 super delicious dishes up close. On a daily basis, he works in the restaurant with people of many different nationalities, and his girlfriend is half Thai. This is what the book is about.
Fast food is therefore in this connection a good mix of foreign street food classics and Danish cafeteria evergreens from Mark's own hand: From ravioli, tacos, empanadas, pad thai, bahn mi and spring rolls to meatball sandwich, Parisian steak, bbq ribs, chili and hot dogs. Most recipes are real bids for fast food in the true sense of the word, as many of us know and love it. A few are more weekend projects that can be done when the time is right. However, many of them can be frozen for later use, so there is just fast food another day
