The Santoku (Japanese for "Three Virtues") is a Japanese chef's knife, whose name refers to its suitability for meat, fish, and vegetables. The chef's knives from the PUMA IP series originate from a design by the German knife maker and author Ernst Siebeneicher-Hellwig and combine high Japanese blade quality with the advantages of a modern design. Each individual piece is manufactured with the utmost care from the best materials. The blade has 67 stainless layers, with the core made of Japanese V-Gold No.10 High Carbon Stainless Steel (VG10). This is a very hard and edge-retaining knife steel. The layers on the VG10 core consist of 33 layers per side, alternating between the Japanese steels SUS 430 and SUS 431. The blade is ice-hardened to about 60 HRC and is characterized by excellent edge retention, keeping the knife sharp for a long time. The handle is made from warp-resistant Pakkawood. Due to these properties and the high processing quality, each knife is well suited for all cutting tasks in the kitchen. In addition, the functional handle-blade design supports the pleasant handling of all PUMA IP chef's knives.
