Whether rough preliminary work or fine cutting tasks need to be done, it is always important that the blade can be guided closely along the bone to avoid unnecessary damage to the meat pieces. That is why our boning knives are equipped, depending on the intended use, with either slightly flexible or rigid blades in various shapes and lengths. Since sharpness and edge retention as well as corrosion resistance also play a crucial role, the blades of our knives from this series are made of German kitchen knife steel according to DIN WN 1.4116 (X50CrMoV15). The handles made of high-quality and acid-resistant plastic "Polypropylene" are, as is customary for professional kitchen cutting tools for hygienic reasons, seamlessly molded onto the tang.
