The sharpening inserts - differences & usage
The anvil sharpening inserts are designed for blades that are sharpened at the same angle on both sides. Bypass sharpening inserts are intended for single-bevel knives.

red: kitchen knives / garden shears / loppers / sharpeners / boning knives
blue: meat cleaver
purple: garden shears / sharpeners / bread knives
pink: fine scissors / grass shears
